Known as one of France’s greatest chefs, most notably for his new and innovative resurrection of classic French Mediterranean cooking which became known as Cuisine of the Sun.

Born in Commentry, in the centre of France in 1930 he went on to become one of the most starred chefs in France. He and his wife, Denise, bought the Le Moulin de Mougins in 1969 and it went from strength to strength over the years, winning a first Michelin star in 1970 and a second in 1972 and a third in 1974. He then bought, again in Mougins, L'Amandier, which quickly earned him another two stars.

Although better known as a chef he was also an author of cookery books Vergé, perhaps his best known work was Ma Cuisine du Soleil (1978), translated as “Cuisine of the Sun” which quickly became one of the most sought after cookery titles among young chefs of that era.

Vergé continued his life's passion as Head Chef in the kitchens at Le Moulin de Mougins until his retirement in 2003 when he handed the reins over to Alain Llorca.
