A lover of French gastronomy and his home on the French Riviera, Jerome draws inspiration from his environment to offer a menu filled with memorable flavours. In keeping with the Mediterranean culture, he used local and regional products as well as fresh fish and seafood.

His years of experience with some of the great chefs have taught him that a plate is a work of art.
